  • 1 lb. ground turkey ( I used 99% lean)
  • 1 tsp. olive oil
  • 1 jalapeno pepper, minced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 sweet potato, cut into cubes
  • 1-14.5 oz. can fire roasted diced tomatoes
  • 1 cup frozen corn ( I used 1 fresh corn on the cobb)
  • 2 cups cooked black beans
  • 2 tsp. cumin
  • 1-1/2 tsp. coriander
  • 1-1/2 tsp. chipotle chili powder
  • 1 cup Pomegranate juice ( I used POM brand, found in the produce aisle refrigerated in my local grocery story)
  • 1/2 cup cilantro, minced (optional)


  1. In a large pot, Heat your 1 tsp. olive oil and brown your ground turkey until ¾ cooked through. Add your yellow onions, jalapeno pepper, red pepper and garlic to your ground turkey mixture and continue cooking until onions are translucent and ground turkey is fully cooked. About 5 minutes.2. Mix in your cubed sweet potatoes, diced tomatoes, corn, black beans. Add in the cumin, coriander and chipotle chili powder. Saute for 1 minutes or until fragrant. Stir in your pomegranate juice. Bring to a boil and then simmer for 25 minutes or until sweet potato chunks are tender
